Rather than relying on numbers to triumph, the Protoss rely on strength of the units they have. Protoss units take up more supply than other species', but their combined hit points and shield points make them formidible. All Protoss units require Psi generated from Pylons, and all Protoss structures need to be within the Psi Matrix the Pylons emenate around then to be powered. If the structure loses contact with the Psi Matrix of a pylon, it is shut down and rendered useless until another pylon is built near it. Protoss units and structures all have shields, which take punishment in the place of hit points until depleted. If a unit or structure's shields are damaged, they will regenerated slowly, so unless hit points are taken off, no permanent damage is done.
